Great care is taken when producing the delightful menu and as many ingredients as possible are sourced locally to ensure flavour, freshness and quality.
They aim to offer an exciting variation of Scottish produce including, at different times, venison (red deer, roe or fallow deer), pheasant, partridge, pigeon or duck, all of which are provided locally. They also use fish from Scottish waters and summer berries from the Carse of Gowrie.
