Recently under new management, The Hide Out is a small intimate venue with a very unique, funky and modern feel, serving delicious Tex-Mex cuisine. According to food historians, Tex-Mex cuisine originated hundreds of years ago when Spanish/Mexican recipes combined with Anglo fare. Tex-Mex is fast becoming a twentieth century phenomenon and is a highly spiced and vibrant way of cooking, adapted from Mexican cuisine to suit the US, specifically Texan tastes, hence the name Tex-Mex. The gourmet Tex-Mex "fad" began in the 1970s.
The ingredients used are common in Mexican cuisine, although ingredients unknown in Mexico are often added. Tex-Mex cuisine is characterized by its heavy use of meat (particularly beef), beans, and spices. Nachos, crispy tacos, crispy chalupas, chilli con queso, chilli con carne, flour tortillas, chilli gravy, fajitas and pecan pralines are all Tex-Mex inventions. Tex-Mex is often served with tortilla chips and a hot sauce or salsa.
