The dishes chosen on the menu take into consideration the season & availability of the best ingredients. The executive head chef, Tom Walsh, is a huge fan of mushrooms which appear on this menu once or twice. The mushroom risotto uses several varieties of mushroom that grow all over Ireland at this time of year.
The rich Irish-produced Goats Cheese Parfait with its nutty flavour coming through, matched by the earthiness of the beetroot (prepared in different ways) really brings an essence of Autumn / Winter to the restaurant. Another marriage on the menu of French cuisine & Irish produce is the Coq au Vin dish. With locally grown vegetables and other Irish ingredients they have brought this classic French dish to life.
